Cheese-Stuffed Steak Rolls

Ingredients:
- 4 thin-cut sirloin steaks (about 1/4 inch thick)
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled blue cheese (optional)
- 1/4 cup fresh spinach, chopped
- 1 small red bell pepper, julienned
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- Salt, to taste
- 2 tbsp olive oil (for searing)

For the Sauce:
- 1/2 cup beef broth
- 1/4 cup heavy cream
- 1 tbsp Dijon mustard
- 1/4 cup grated Parmesan cheese
- 1 tbsp butter

Directions:
1. Prepare the Steak Rolls:
- Lay the steaks flat on a cutting board. Season both sides with garlic powder, smoked paprika, salt, and black pepper.
- On one side of each steak, spread the mozzarella, blue cheese (if using), chopped spinach, and julienned bell pepper evenly.
- Roll each steak tightly and secure them with toothpicks or kitchen twine.

2. Sear the Rolls:
- Heat olive oil in a skillet over medium-high heat.
- Sear the steak rolls for 2-3 minutes on each side until they are nicely browned. Remove them from the skillet and set aside.

3. Make the Sauce:
- In the same skillet, add the beef broth, scraping up any browned bits from the bottom.
- Stir in the Dijon mustard, heavy cream, and grated Parmesan cheese. Let it simmer until the sauce thickens slightly.
- Add the butter and whisk until the sauce is smooth.

4. Combine and Finish:
- Return the steak rolls to the skillet and spoon the sauce over the top.
- Cover the skillet and let it simmer on low heat for 5-7 minutes, or until the cheese inside melts and the steak reaches your desired level of doneness.
