Easy Chicken Burrito Recipe
Ingredients:
For the Chicken:
1 medium rotisserie chicken (approximately 2–3 pounds)
1 tablespoon taco seasoning (store-bought or homemade)
2 tablespoons salsa (store-bought or homemade)
1 tablespoon water
For the Refried Beans:
1 cup refried beans (store-bought or homemade)
¼ cup water
For the Burritos:
2 cups cooked rice (white rice, brown rice, or cauliflower rice)
4 (10-inch) flour tortillas
1 cup shredded cheese (divided; Mexican-style cheese blend preferred)
Suggested Toppings (All Optional):
Shredded lettuce
Pico de gallo
Diced onion
Roasted corn kernels
Chopped cilantro
Sour cream
Guacamole
Chimichurri ranch
Instructions:
Prepare the Chicken:
Remove the skin and bones from the rotisserie chicken and shred the meat into bite-sized pieces. In a bowl, combine the shredded chicken with taco seasoning, salsa, and water. Mix well to coat the chicken evenly.
Prepare the Refried Beans:
In a small saucepan, heat the refried beans over medium heat. Add water to reach your desired consistency, stirring until warmed through.
Assemble the Burritos:
Lay out a flour tortilla on a clean surface. In the center, layer the cooked rice, refried beans, shredded chicken, and a sprinkle of shredded cheese.
Wrap the Burrito:
Fold in the sides of the tortilla, then roll it up from the bottom to the top, securing the filling inside. Repeat with the remaining tortillas and filling.
Serve:
Serve the burritos warm, topped with your choice of optional toppings like shredded lettuce, pico de gallo, diced onion, roasted corn, chopped cilantro, sour cream, guacamole, or chimichurri ranch.
