Peanut Butter Rice Krispie Balls Recipe

Ingredients:
1 cup peanut butter (smooth or chunky)
1/2 cup honey (or light corn syrup)
3 cups Rice Krispies cereal
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 1/2 cups semi-sweet chocolate chips (for coating)
1 tablespoon coconut oil (or vegetable oil, to smooth the chocolate)
Instructions:
1. Make the Peanut Butter Mixture:

In a medium saucepan, combine the peanut butter and honey (or corn syrup). Heat over medium-low heat, stirring constantly, until the mixture is smooth and melted. Remove from heat and stir in vanilla extract.
2. Mix with Rice Krispies:

In a large mixing bowl, add the Rice Krispies and powdered sugar. Pour the warm peanut butter mixture over the cereal and mix gently until everything is evenly coated.
3. Form the Balls:

Let the mixture cool slightly so it's easier to handle. Once cool enough to touch, use your hands to roll the mixture into 1-inch balls. Place the balls on a parchment-lined tray or baking sheet.
4. Coat in Chocolate:

In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
Dip each peanut butter ball into the melted chocolate, covering it completely. Use a fork or spoon to remove the balls from the chocolate and place them back on the parchment paper to set.
5. Chill and Serve:

Refrigerate the balls for about 30 minutes to 1 hour until the chocolate coating hardens.
