Ingredients:

1 tbsp olive oil

1 cup mushrooms, sliced
1 tbsp butter or olive oil
1/2 tsp garlic powder
1/4 tsp salt

For the Mashed Sweet Potatoes:
1 large sweet potato, peeled and cubed
1 tbsp butter
1/4 cup milk (or dairy-free alternative)
1/2 tsp cinnamon (optional)
1/2 tsp salt
Instructions:
Prepare the Mashed Sweet Potatoes:
In a pot, bring water to a boil. Add the cubed sweet potato and cook until tender, about 15-20 minutes.
Drain the sweet potatoes and return them to the pot. Add butter, milk, cinnamon (if using), and salt. Mash until smooth and creamy. Set aside.
