Enjoy a delicious and flavorful Tofu Shawarma that’s perfect for a quick meal or a satisfying lunch! This plant-based dish is packed with spices and served with fresh veggies and tzatziki. Here’s how to make it:

Ingredients:
For the Tofu:

200g extra-firm tofu, pressed and drained
1 tablespoon olive oil
½ lemon, juiced
1 tablespoon honey (or maple syrup for a vegan option)
1 teaspoon cumin
1 teaspoon smoked paprika
1 teaspoon turmeric
1 teaspoon oregano
½ teaspoon cayenne chili pepper (adjust to taste)
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon ground ginger
2 garlic cloves, minced
To Serve:

2 flatbreads (pita or wraps)
1 head little gem lettuce, leaves separated
1 large tomato or 6 cherry tomatoes, sliced
½ cucumber, sliced
4 tablespoons homemade tzatziki
Instructions:
Prepare the Tofu:
Cut the pressed tofu into thin strips or cubes, depending on your preference.
Marinate the Tofu:
In a bowl, whisk together the olive oil, lemon juice, honey, cumin, smoked paprika, turmeric, oregano, cayenne pepper, salt, black pepper, ground ginger, and minced garlic.
Add the tofu to the marinade, tossing to coat well. Let it marinate for at least 30 minutes (or up to a few hours in the refrigerator for more flavor).
Cook the Tofu:
Heat a non-stick skillet over medium-high heat. Add the marinated tofu and cook for about 5-7 minutes, turning occasionally, until golden brown and crispy on all sides.
Assemble the Shawarma:
Warm the flatbreads in a dry skillet or microwave.
On each flatbread, layer the little gem lettuce, cooked tofu, sliced tomato, and cucumber.
Add Tzatziki:
Drizzle or spread 2 tablespoons of homemade tzatziki over the top of the fillings.
Wrap and Serve:
Roll up the flatbreads tightly, and serve immediately. Enjoy your delicious Tofu Shawarma!
