Ingredients
For the Meatloaf:

• 2 large eggs

• 2 cloves garlic, minced
• ¼ cup ketchup
• 1 tablespoon Worcestershire sauce
• 2 tablespoons parsley, finely chopped
• 1 teaspoon salt
• ½ teaspoon black pepper
For the Onion Gravy:
• 2 tablespoons butter
• 1 large onion, thinly sliced
• 2 tablespoons flour
• 2 cups beef broth
• 1 teaspoon Worcestershire sauce
• Salt and pepper to taste
Instructions
For the Meatloaf:
1. Preheat your oven to 375°F (190°C) and prepare a loaf pan or baking sheet with non-stick spray or parchment paper.
2. In a large bowl, combine breadcrumbs and milk. Let sit for 2–3 minutes to hydrate.
3. Add ground beef, eggs, diced onion, garlic, ketchup, Worcestershire sauce, parsley, salt, and pepper. Mix gently until just combined.
4. Shape the mixture into a loaf and place it in the prepared pan or on the baking sheet.
5. Bake for 45–55 minutes, or until the internal temperature reaches 160°F (71°C). Remove from the oven and let rest for 10 minutes before slicing.
For the Onion Gravy:
1. Melt butter in a skillet over medium heat. Add sliced onions and sauté for 10–12 minutes until golden and caramelized.
2. Sprinkle flour over the onions and stir to combine. Cook for 1–2 minutes to eliminate the raw flour taste.
3. Gradually add beef broth, whisking continuously to prevent lumps. Stir in Worcestershire sauce and bring to a simmer.
4. Cook for 5–7 minutes until the gravy thickens. Season with salt and pepper to taste.
