Greek Cheese Bread (Tiropita Bread)

Ingredients:
3 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried oregano (or fresh oregano, chopped)
1/4 cup olive oil
3 large eggs
1 cup plain Greek yogurt
1 cup crumbled feta cheese
1 cup shredded mozzarella or Kasseri cheese
Optional: 1/4 cup chopped fresh dill or parsley for extra flavor
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and lightly flour a loaf pan or line it with parchment paper.
Mix the Dry Ingredients:
In a large bowl, whisk together the flour, baking powder, salt, black pepper, and oregano.
Combine the Wet Ingredients:
In a separate bowl, whisk the eggs, olive oil, and Greek yogurt until smooth and well combined.
Fold in the Cheese and Herbs:
Add the crumbled feta, shredded mozzarella (or Kasseri), and optional fresh herbs to the wet mixture. Stir gently to combine.
Combine Wet and Dry Mixtures:
Gradually add the wet ingredients to the dry ingredients. Mix until just combined—be careful not to overmix, as this can make the bread dense.
Transfer to the Pan:
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake the Bread:
Bake in the preheated oven for 40-45 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
Cool and Serve:
Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and serve warm or at room temperature.
Serving Suggestions:
Pair with a fresh Greek salad or tzatziki sauce for a Mediterranean feast.
Serve alongside soups or stews for a cheesy, hearty side.
